  1. Begin by boiling 6 eggs for 10-12 minutes or until they are hard-boiled. Once done, peel the eggs and set them aside.
  2. Heat 2 tbsp of oil in a pan over medium heat. Add 1 tsp of cumin seeds and let them splutter.
  3. Add 2 finely chopped onions to the pan and sauté until they turn golden brown.
  4. Add 1 tsp of ginger paste and 1 tsp of garlic paste to the pan and sauté for a minute.
  5. Add 2 finely chopped tomatoes to the pan and cook until they are soft and pulpy.
  6. Add 1 tsp of coriander powder, 1 tsp of cumin powder, 1 tsp of red chili powder, 1 tsp of turmeric powder, and salt to taste. Mix well and cook for 2-3 minutes.
  7. Now, add the boiled eggs to the pan and mash them with a spoon or spatula. Mix well with the masala mixture and cook for 5-6 minutes.
  8. Add 1/4 cup of chopped fresh coriander leaves to the pan and mix well.
  9. Serve hot with rice or Indian bread.
